Description
Clay-limestone soil, vines on light slopes facing full south at 150m.
90% Grenache, 10% Syrah/Mourvèdre. Yields of only 18 hl/ha. Hand-harvested. Traditional vinification: grapes destemmed, then vinified in stainless steel vats, with many full-body pigeages.
80 days in vat. 12 months of maturation in stainless steel vats.
Deep red colour. Charming nose of red fruits, morello cherries and dog rose. In the mouth it’s delicious, plump with an explosion of red fruit. Soft tannins give the wine a velvety mouthfeel. Depth and body followed by a fine, luxurious finish.
Drink young to savour its fruit. Try it with jambon Iberico ; charlotte de boudin aux endives confites au miel et à la Fourme d’Ambert ; filet de bœuf aux morilles ; suprême de poulet fermier au Roquefort et sa sauce aux épices ; gâteau fondant au chocolat noir…
